Besides the frosting, sometimes nuts like walnuts, pecans or almonds are also added into the cake batter. Even dried fruit can be added as well! Some recipes have put pineapple, raisins or even shredded coconut into their carrot cakes. Healthy Carrot Cake
- 60 g Almonds
- 170 g Carrot
- 3 Eggs
- 180 g Corn Oil
- 90 g Brown Sugar
- 210 g Self Raising Flour
- 70 g Raisin
- Bake almond nibs at 170c for 6 minutes and shred the carrot.
- In another bowl, whisk corn oil, brown sugar at low speed and add 3 eggs once at a time and whisk at high speed.
- Sift self-raising flour and mix well. Add the shredded carrot, roasted almond nibs, raisin and mix until well combined.
- Line 6 inch loose base mold with baking paper and pour the mixture into it. bake at 150c for 45 minutes.
