What happens when you feel like eating cake but want to stay healthy at the same time? Carrot cake is the answer to your problems. Carrots are rich in vitamins, minerals and fiber. They are also a good source of antioxidants. So, putting them in cake was obviously a good decision. But who was the one who made this decision in the first place? Well, no one really knows where carrot cake came from, but many believe it evolved from the carrot pudding that was eaten by Europeans in the middle ages. Either way, it became the carrot cake that we know and love today. A carrot cake is a cake that contains carrots mixed into the batter, and is usually topped with cream cheese frosting. But of course, if you want to go for a healthier route you can skip the frosting entirely and just eat it plain.
Besides the frosting, sometimes nuts like walnuts, pecans or almonds are also added into the cake batter. Even dried fruit can be added as well! Some recipes have put pineapple, raisins or even shredded coconut into their carrot cakes. This just shows that carrot cake is a great dish that can be customized to your liking, adding your favourite fruits and nuts inside to make it your own perfect recipe.
