1. YOUR BUTTER OUT LONGER THAN IT TAKES YOUR GIRLFRIEND TO GET READY
If your butter has been out too long, it is going to be too soft and faster to melt. This will make your biscuits flatter and darker because the butter has been melted too much and would have been slightly overcooked.
2. USING HUGE EGGS JUST BECAUSE IT IS HUGE
Usually bigger is better right? *winks* But NOT in this case. Bigger eggs will have a higher content of egg whites which means higher liquid content. This makes the biscuits expand too much and it would be more difficult to bake it thoroughly even after quite some time in the oven.
3. BEATING YOU EGGS HARDER THAN YOUR PARENTS BEAT YOU WHEN YOUR WERE A KID
*thinking about the painful memories* AHAHA. Do not beat your eggs too hard and too long. It will end up incorporating too much air into the dough and your biscuits will have bubbles when it starts to bake in the oven. (and that is not going to look nice at all).
4. NOT LETTING YOUR DOUGH REST (GIVE THE LIL GUY A BREAK MAN)
Imagine this: you have been working all day without breaks, so you are going to develop muscle strains and feel very stiff right? Well it’s kind of the same with dough. After kneading it, you should let it rest. If you don’t, the gluten will develop and it will get too tough. Your biscuits will then come out very hard. So letting it rest just for that 5 to 10 minutes is going to make a whole lot of difference.
5. NOT KNOWING WHETHER TO GREASE OR USE PARCHMENT PAPER ON THE PAN
Another huge mistake lots of people make! If you are baking for example, chocolate chip cookies, you should be using parchment paper. If you use a pan greased with butter, the cookies are going to expand, flatten and get burnt because of the butter. However if you are baking biscuits that are intended to be more dry like sugee cookies, you can then use butter to grease the pan.
6. SKIPPING THE PREHEATING PART OF YOUR OVEN
THIS IS VERY IMPORTANT. It ensures that you have gotten the right and regulated temperature inside the oven to bake your biscuits. You can then pop your biscuits in the oven and start baking them immediately. If you are struggling with using the oven, check this oven tips and tricks.
7. NOT USING THE FAN IN YOUR OVEN (WHYYYY?)
It is there for a reason my dear friend hahaha! And that reason is to regulate the temperature in the oven. This will ensure your biscuits are cooked evenly. If you do not have a fan though, you can take the pan out and move it up or down after about 10 minutes of baking. This can help ensure your biscuits are cooked evenly too.
8. THINKING THE COOLING RACK IS NOT USEFUL
You may think that using a cooling rack is not useful but on the contrary it is. This is because when the biscuits have finished baking, it will still be warm and there is going to be condensation – a process that will release water vapour. So if the biscuits are still on the pan, the water is not going to be drained since there are no holes on it like a cooling rack. It is going to stay in the pan and make your biscuits soggy. If your biscuits get soggy, it is not going to last very long.
9. STORING THE BISCUITS IN AN AIRTIGHT CONTAINER TOO QUICKLY
If you store them when they are still warm, there is going to be steam or water vapour trapped in the container. Like mentioned earlier, this water vapour then is going to make your biscuits soggy.
