1. Evaporated Milk

That creamy consistency is just what you’re going to need as a great coconut milk substitute. There are even coconut flavored evaporated milk! If you bake or cook a lot, you may even have that too at home.

You can use the exact amount that the recipe calls for and substitute the coconut milk with the evaporated milk.

2. Greek Yogurt

Another substitute with a thick, silky consistency. You can easily add it to curries and other Asian dishes to further bring out the flavor in a dish. Plus, yogurt has healthy probiotics that are very beneficial for your body.

Be sure to use plain classic old greek yogurt instead of flavored ones to substitute the coconut milk. To ensure that the yogurt doesn’t overpower the dish due to its tangy flavor, you may add a little water to dilute it. 

3. Soy Milk

Now this is great also as for lactose-intolerant folks. Besides that, soy milk is high in protein and rich in nutrients like calcium and protein. 

Since soy milk is very light, you will need to add a teaspoon of cornstarch or corn flour to act as a thickening agent to substitute the coconut milk. Do not use sweetened soy milk as it may mess up the recipe.

Tofu is a perfect substitute too because of its consistency. So what you gotta do is puree the tofu and add soy milk in a 1:1 ratio. This will result in a nice creamy mixture.

Another coconut milk substitute with great health benefits. You can add it for desserts and even when cooking dishes. 

Same with soy milk however, since it is light, you will need to add thickening agents like cornstarch. A teaspoon of it would be sufficient. Remember also to go with unsweetened almond milk to preserve the original flavors of the recipe.
